A curious sign taped to the front door of Balmoral’s old Analog café has sparked plenty of chatter – and it seems a new charcoal chicken shop is opening at the beach.
The new arrival, Prego Chicken – hails from Ryde and is celebrated for its bold, charcoal kissed flavours. The Mosman store will serve as the brand’s flagship, introducing the lower north shore to its much-loved menu for the first time.

Owner Michael Ramondino told Mosman Collective the Prego’s flagship store will bring its bold flavours to the beach.
Owner Michael Ramondino told Mosman Collective the store’s coffee window will open in two weeks, with the rotisseries officially firing up at the end of September.
“We are beyond excited to be opening at Balmoral Beach, and it feels like a home coming for me,” Mr Ramondino said.
“I spent nearly every summer weekend of my childhood down by the Rotunda with my grandparents, and when the leasehold came up, I knew it was meant to be.
“We can’t wait to become part of the community.”

Prego promises “no Mosman tax”, with menu prices remaining the same as their Ryde store.

Founded at Midway Shopping Centre in Ryde, Prego quickly built a loyal customer base thanks to its focus on quality, flavour, and tradition.
“Each chicken is marinated, then slowly cooked over charcoal to lock in juices and create a smoky, unmistakable taste,” Mr Ramondino said.
He confirmed there will be no “Mosman tax” on any menu item, which will remain consistent with Ryde prices.
“The menu is built for both comfort and variety, and everything is delicious. Alongside our award-winning chicken, there are burgers, hand cut chips, healthy salads and warm bread rolls,” he said.

Prego also offers a selection of Burgers. Caption 2. Chips are hand cut and one of the brand’s most popular items.
Diners can expect lots of room to sit in as well as grab-and-go.
“The location makes it a natural stop for a post-swim lunch, an easy midweek dinner, or a weekend family feast,” Mr Ramondino said.
“We are looking forward to welcoming locals and getting involved in the community. There is lots of fun stuff planned for a fantastic summer at Balmoral.”
