One of Australia’s most successful food chains, Fishbowl, will open in Mosman next year.

One of Mosman’s most successful sons is coming home – and he’s bringing his $100 million cult food chain with him.

Nic Pestalozzi, Co-Founder of salad mecca Fishbowl, has confirmed the healthy, quick service restaurant will open at 910 Military Rd in March 2026.

Speaking exclusively with Mosman Collective, Pestalozzi said the decision to open in the neighbourhood marks a long-awaited homecoming.

“I grew up in Mosman with my two brothers and our hearts have never really left the area,” he said, “I’ve spent years waiting for the right village location to pop up, and finally it has.”

Founded in 2016 alongside mates Nathan Dalah and Casper Ettelson, the Japanese-inspired salad brand has exploded to 56 locations, including two in New York City, and now turns over an estimated $100 million annually.

At its core, Fishbowl’s mission is simple — to make healthy food fast, fresh, and accessible.

Menu favourites include the OG Bowl (regular $14.90, large $17.90) with salmon sashimi, shallots, kale, beets, red onion, edamame beans, roasted sesame dressing, seaweed salad, tobiko, and crispy shallots.

Warm options like the Braised Beef Bowl (regular $17.90) feature beef brisket, kale, cucumber, sweet potato, red onion, tamari ponzu, wasabi mayo, and cashews.

“Our mission is to make super healthy meals accessible to as many people as possible,” Pestalozzi said, “Our menu, which starts at around $12 and caps out at around $20, has something for anyone searching for fresh food with flavour.”

Fishbowl Mosman will open at 910 Military Rd in March 2026.

Though he now lives in the eastern suburbs, Pestalozzi said he plans to work regular shifts in Mosman once the doors open.

“Working in our stores ensures a strong connection between management and our crew. They know that we understand the product and it’s important for us to maintain a face-to-face relationship with our customers.”

A former Mosman Public School student (who can still recite the school song), Pestalozzi said the new venue will create “at least” 20 jobs.

“We are looking for local kids eager to work in a fun and high energy environment,” he said.

“Our staff learn valuable small business skills and there is a pathway for career advancement.”
