On a Roll: Sydney’s best brisket sandwiches are coming to Cremorne.

Who doesn’t love a loaded sandwich? A cult sambo shop is about to open in Cremorne.

Love American-style BBQ? Then get ready to sink your teeth into Sydney’s best brisket when cult sandwich shop On a Roll opens its second store in Cremorne this August.

Pitmaster Sam Frizell has chosen a sunny corner spot on Parraween St, formerly occupied by Best Bagel Co, to serve a range of mouth-watering sambos that have surged in popularity over the past 12 months.

His tiny Crows Nest kiosk rose to fame after being discovered by the Good Food Guide, with hungry customers now queueing every Wednesday to Sunday for premium proteins cooked low-and-slow for 14 hours.

“We will keep our space in Crowie, but the time is right to expand our offering, and we wanted to move into Cremorne,” the 33-year-old told Mosman Collective.

“It’s a much bigger area, and customers can sit and enjoy their sandwiches in the sunshine.”

On a Roll – a tiny Kiosk in Crows Nest – attracts foodies from all over Sydney and serves between 800-1000 sandwiches each week.

Sam said On a Roll will “soft launch” on August 14, with trade officially underway on August 21.

In Crows Nest, the offering is simple – but delicious, with 800-1000 American-style sandwiches sold each week.

Favourites include the Cubano (Mexican-style pork, pickles, mustard), the Rueben (pastrami, sauerkraut, Swiss cheese, Russian dressing), and a “fancy” ham and cheese toastie made gourmet with the addition of provolone and bocconcini.

Two hundred kilograms of meat is prepared, seasoned and cooked at Sam’s home each week in Weber kettles and a Green by Mountain Grills, “which makes it easier to cook overnight, and there’s a lot less maintenance,” Sam said.

He uses Applewood chips to impart smokiness and cooks beef and pork at 110 degrees for around 14 hours.

“Cherrywood used to be my go-to, but I have settled on apple,” he revealed to Mosman Collective.

Sam famous brisket is slow cooked for 14 hours and is “the best you’ll find outside Texas”, he says.

Sam said Cremorne customers could look forward to the Crows Nest staples and a few new menu additions.

“We’ll have a Pulled Lamb Shoulder, Philly Cheese Steak, Buffalo Chicken and a vegetarian option, along with our original sandwiches,” he said.

“We have a premium product that’s the best BBQ you’ll find outside Texas.

“Our sauces and accompaniments are all homemade, and a lot of love goes into every bite.”

Sandwich prices will start at $12 and go up to $19.
