Food News: Cult salad bar Fishbowl targets late April launch for new Mosman store.

Fishbowl founder Nic Pestalozzi has confirmed his cult salad bar will open in Mosman this April.

Mosman’s long-awaited Fishbowl outlet is targeting a late-April opening, with co-founder Nic Pestalozzi confirming the business is now in the final stages ahead of launch.

The store, located at 910 Military Rd, has been closely watched by locals since its arrival was first confirmed by Mosman Collective last year, with repeated questions about when the doors would open.

“Pending some council approvals, we’ll have a much clearer idea of the opening date, but late April is realistic,” Pestalozzi said this week.

The Mosman outlet marks a homecoming for Pestalozzi, who grew up in the suburb and attended Mosman Public School before co-founding Fishbowl, now one of Australia’s most successful fast-casual food brands with 56 locations, including two in New York City.

The business turns over an estimated $100 million annually.

Fishbowl has built its popularity on a streamlined, made-to-order menu centred on fresh, Japanese-inspired bowls. Customers can choose from signature combinations or build their own, starting with a base of greens, rice, or grains, then adding proteins such as raw salmon, grilled chicken, slow-cooked beef, or tofu, alongside vegetables, pickles, and house-made dressings.

Signature bowls include salmon and chicken options, while vegetarian and vegan bowls remain a strong part of the offering. Most are priced under $20, depending on protein and add-ons, positioning Fishbowl competitively within the fast-casual lunch market.

The brand’s appeal lies in delivering food that is quick but perceived as healthy, consistent and filling. This formula has driven strong lunchtime trade across Sydney and helped establish Fishbowl as a dominant player in the growing “healthy fast food” category.

Beyond food, the Mosman store is expected to employ a large number of local teenagers and students.

“This is going to be a great place for local kids to work – we’ve already been blown away with the interest and applications from local residents,” Pestalozzi said.

A QR code displayed on the shopfront allows prospective employees to apply directly, with applications also open through the Fishbowl website.

Pestalozzi said he was also keen to embed the brand in the local community, confirming plans to collaborate with Mosman Public School.

While a final opening date has yet to be confirmed, the late-April target is the clearest indication yet that the fit-out is nearing completion.
