Mosman Family Traditions: Food Envy’s Mel Clark shares her sensational secret Sausage Roll recipe!

Mel Clark is renowned as one of the best “home cooks” in Mosman. The busy mum of two has achieved cult status in recent years, with her popular range of “food envy” christmas puddings, that are an annual sell out at Mosman markets. Now, for the first time, she opens her recipe book, to share some of her family favourites with Mosman Collective.

My Mum’s Sausage Rolls

Ingredients:

1kg good quality sausage mince (ask your butcher)

1 small onion (grated and juice squeezed out)

2 green apples, grated.

2tb parsley, finely chopped

1 egg (+ extra egg for brushing)

Salt and pepper to taste

4 sheets of buttery, good quality puff pastry

Method:

Preheat oven 170 degrees (fan forced)

Using your hands, mix all the ingredients together in a bowl.

Lay your four sheets of the pastry out, then cut each sheet in half to make eight rectangles.

Place the sausage mixture on each rectangle (a little thicker than a regular sausage), dividing all mixture onto each pastry piece.

Take your extra egg. Whisk, and then brush along one side of each pastry sheet, rolling it over to meet the brushed egg line.

Cut the completed rolls into bite sized pieces, brush extra egg wash on the top of each sausage roll.

Bake for 20 minutes or until golden on top.

Serve with tomato sauce or relish.
